Chef Mike's is a direct descendant of the original Cajuns that landed on the banks of St. Martinsville, Louisiana in 1755 from the Canadian provinces of Nova Scotia and New Brunswick. They brought with them values of Faith, Family and Community creating a unique culture of food, music and dance. At a very early age, Chef Mike learned and developed both Cajun and Creole Cuisines from both of his grandmothers and fortunately both of his great grandmothers, women by their own vitality and longevity allowed him to touch his past and savoring the present and carrying his ancestry for generations to come.

Cajun Mike worked with us to have exactly the menu we wanted; traditional items we wanted plus a couple of his specialties to make a very satisfying menu. 16 adults plus several young ones and all with only positive comments on the quality of the food not to mention the quantity. Lots of extra food taken home by the guest and for the freezer from where we will enjoy Cajun Mike's in the weeks to come.
A plus we enjoyed was his attention to details. Everything set up for our enjoyment all we had to do was sit back, relax and enjoy the wonderful food.

Food Art was an amazing caterer. I found them online and everything I did with them from that point forward was wonderful. They easily handled all of our last minute changes, and were very responsive. I dealt specifically with Stephanie at Food Art. They provided on site assistance at the wedding, and it was almost like having an additional day of planner from the end of the ceremony until the end of the reception. The food was beautiful and so was the service.

Conveniently located just two blocks from the Convention Center, its three private dining rooms combine a New Orleans warehouse feel with modern design, creating the perfect backdrop for any type of gathering. Exposed brick walls and original wood sash windows are typical of the area’s late nineteenth-century warehouse, and the design of Calcasieu remains true to those origins.

I'm a little confused because I believe this is Private Dining by Chef Donald Link. Upstairs, above Cochon.If you want a place for a spectacular dining experience for a medium to large group - this is it.I just finished a five course meal that simply amazed me.1. Louisiana Chicken and Sausage Gumbo: a redefinition I think, with a deep richness and warmth that made me want to keep eating; knowing that I had four more courses coming, I managed to pace myself.2. Crawfish Pie & Boudin with Cochon (House) Mustard. The crawfish pie was tasty but perhaps the most unremarkable piece of the meal. The Boudin with mustard was a revelation. Simply put, I didn't know that mustard could be that delicious (and I enjoy mustard); it perfectly the light, yet crispy sausage that is the boudin. Astoninishingly delicious.3. Pan-braised catfish smothered with tomatoes, peppers and fresh basil. Lightly breaded, pan-braised, leading to a light crispy coating of supremely tender light catfish seasoned with flavors that draw their strength from their freshness. Very enjoyable and yet two more courses to go.4. Smothered Pork with cabbage with and bacon choucroute. I didn't know pork could be this good, this tender, this richly and coplexly flavored with subtle absorbent cabbage and just the right thread of smoky bacon-ness. Now I understand why the reviews for Cochon downstairs are so spectacular; this is a kitchen with a firm mastery of the pig.5. Chocolate Chip Bread Pudding. I definitely didn't need this, but couldn't resist.
