What’s your signature dish?

I have a number of signature dishes! People do come far and wide for my traditional Sicilian dishes such as a pasta alla Trapanese (Almond and tomato pesto) and my Sicilian ricotta cannoli. I love cooking foods from the Mediterranean (both East and West) as the dishes are infused with such history, spices and ingredients. I love cooking foods from Iran, Cyprus, Turkey, Greece, Italy, Majorca, Spain.

I do also enjoy cooking a variety cuisine including (not limiting to) Asian, Indian, Mexican and Australian

How do you go about creating the perfect menu for your clients?

When I meet my clients I ask them a series of questions about them and what their favourite foods are and the significance of particular type of foods are to them. From there, I start to create an unique menu retelling their life story so far through food.

What do you love most about your job?

I love bringing people together with food. I love telling my client's story via food. I love how food breaks down barriers, unites people, makes them laugh and cry and I feel that I am privilege to be there, being a part of people's memories.

I love teaching people on ingredients, cooking and the history of food and where it comes from and how it has traveled from one nation to other.

I enjoy foraging around Perth and the countryside to find fresh, local, seasonal ingredients, talking to WA farmers, providores and suppliers etc to see the passion they have and allowing me to shine with their ingredients.

What inspired you to start your own business?

I worked in the corporate world for over 25 years and decided that I needed to do what I truly love, cooking! So, I went back to school and become a chef and was working with some truly amazing chefs around the country. After a few years, I decided that I would love to have my own business and cook the foods that I love and make people happy and at the same time teach them about good local food and how to cook it!
